Ghriba with Very Simple Ingredients

Ingredients:

250g margarine or soft butter

1/4 egg yolk

2 cups of oil (about 320 ml)

1 ½ cups of sugar

2 packets of baking powder (8g each – about 2 teaspoons)

Lemon flavoring
-
200g raisins or dried grapes
-
50g candied orange peel
-
1 tbsp custard powder (or crème pâtissière powder)

Pinch of salt

For decoration: egg white, peanut or almond flakes
-
Nappage glaze for finishing
Preparation:
1. Prepare the base:
In a large mixing bowl, combine the soft butter with the sugar, lemon flavoring, and a pinch of salt. Mix until smooth and creamy. Gradually add the oil, blending continuously, then add the quarter egg yolk and mix well.
2. Add dry ingredients:
Fold in the raisins and candied orange peel. Gradually add flour mixed with baking powder and the custard powder. Mix until you get a soft, pliable dough.
3. Shape the cookies:
Form small balls from the dough, dip them in egg white, then roll them in peanut or almond flakes, depending on your preference.
4. Bake:
Place the balls on a baking tray lined with parchment paper. Bake in a preheated oven at 180°C (356°F) until lightly golden on both sides.
5. Final touch:
Brush the cookies with nappage glaze after baking, then return them to the oven for just 2 more minutes to set the shine.
Chef’s Tip 💡:
For an extra touch of flavor, soak the raisins in orange juice or orange blossom water before adding them to the dough!
